Rustic Rye Saison w/ American(ish) Hops

Kayla and I have been thinking about experimenting more with Brettanomyces. We did ferment our Berliner Weisse with brett but that also had other bugs. After researching through the various homebrew blogs, this is what we came up with for a first try. Our hope is that we get a rustic saison that has equal parts funk and hops.

Hoppy American Brown Ale

We had open containers of cascade and willamette, in addition to several crystal and dark grains on hand. Obviously we decided to make a brown IPA! Recipe is loosely inspired by Dogfish Head Indian Brown Ale.

Citra American Wheat

As the "Throwback" IPA kicked, we thought it would be good to brew a light hoppy beer to drink as it starts getting unbearably cold. We just received a pound of citra hops and thought that an American wheat could be quite thirst quenching. As it is our style, we decided to ten toward the hoppy side on this brew.

Throwback - Old School/New School IPA

Had in mind to brew a throwback IPA with only Centennial and Cascade Hops, and Cali Ale yeast. Here's where the New School comes in: we couldn't resist making another 100% Brett beer. 

Session IPA w/ Experiments

Our normal Session recipe, with the addition of some Vienna Malt. We hoped to make 5 gallons to keg and 4 to experiment with.

Saison w/ Arlington Yeast

After hearing from several people that our attempt at a White House Blonde Ale (w/ Arlington yeast) tasted more like a saison than a blonde, we decided to see how the yeast would do in a traditional saison recipe. Additionally, this beer was supposed to be a hefeweizen for Kayla's birthday but someone (John) got the grain ratio wrong. This mistake turned out alright because the grain we ended up ordering fit perfectly into a saison recipe.

Floor'd Black IPA

We finally brewed a Black IPA! We used the grain that fell on the floor with additional grain from 3 Stars Brewing Co. We decided to finally use some of our pound of mosaic hops and are quite excited to see how it turns out.

White House Honey Ale (WHHA) Again


We loved our 2nd Anniversary WHHA with Arlington yeast so much, we're brewing a batch for Spring. Mostly the same, but we're changing up the honey and tweaking the grain bill. We want to go a honey that is a little milder than the in-your-face Orange Blossom.

(Baby) Oatmeal Stout

Season-appropriate Oatmeal Stout, and it's finally seasonally cold. 

708 Kitchen Sink

Our last tribute to 708 before we moved into a new place. A hoppy and sessionable IPA/Pale Ale with the kitchen sink worth of hops. Cleaning out the freezer!
