Citra American Wheat

As the "Throwback" IPA kicked, we thought it would be good to brew a light hoppy beer to drink as it starts getting unbearably cold. We just received a pound of citra hops and thought that an American wheat could be quite thirst quenching. As it is our style, we decided to ten toward the hoppy side on this brew.

Total Grain (lbs): 11
Projected OG: 1.051
Projected SRM: 3.7

50.00% -- 5.5 lbs 2 Row
50.00% -- 5.5 lbs White Wheat

0.75 ounces Citra at 30 min
2.00 ounces Citra at 0 min
2.00 ounces Citra dry hopped for 7 days

Extras:
6 grams - Gypsum (split between mash and sparge)
1 Whirlfloc tablet
1/2 tsp of Yeast Nutrient

Yeast:
Mixture of two yeasts: WLP001 California Ale Yeast (half a vial) & a 1L starter of Conan yeast.

  • Conan yeast was harvested from the dregs of a bomber of Heady Topper clone provided by a fellow homebrewer.

Mash:
Sacch rest: 60 min at 152F

Notes:
  • 6/15/2014: Brewed
  • Pitched yeast at 65F
  • Fermented near front door (left AC on and placed fermentor in soft cooler with ice pack)
Tasting Notes:

A super juicy summer beer that was heavy on the hops. Became more balanced as time went on. This was a crowd pleaser for hop heads.
