Burton Baton Clone -- Part 2, IIPA

Part 2 of clone of Dogfish Head's Burton Baton, the aggressively hopped and dry-hopped IIPA. Recipe from IPA, by Mitch Steele. 

Front: Old Ale, secondary. Back: IIPA, dry-hopped.

Beer #2: Double/Imperial/II IPA

Fermentables:
88.89% -- 6.00 lbs 2 Row
3.70% -- 4.00 ounces Caramel 10L
7.41% -- 8.00 ounces Table Sugar

Hops:
0.50 ounces Columbus at 60 min
0.75 ounces Cascade at 15 min
1.00 ounce Mosaic at 00 min
0.50 ounces Cascade at 00 min
0.50 ounces Cascade at 6 days
0.75 ounces Mosaic at 6 days

Extras:
2 grams of gypsum in mash
pinch of irish moss

Yeast:
Safale US-05 Dry Cali Ale Yeast

Mash:
Sacch rest: 90 min at 148 F

Notes:
  • 5/11/2014: Brewed 
  • Pitched yeast at 68F
  • Fermented in living room, near front door 
  • 5/17/2014: Transferred to secondary. Dry hopped

Tasting Notes: 6/6/2014. We are popping the first bottle at the Yeastside Meeting.
