Floor'd Black IPA

We finally brewed a Black IPA! We used the grain that fell on the floor with additional grain from 3 Stars Brewing Co. We decided to finally use some of our pound of mosaic hops and are quite excited to see how it turns out.


Recipe specifics:
Size (Gal): 5.25
Total Grain (lbs): 6 lb 5 oz
Projected OG: 1.064
Projected SRM: 27.3
Projected IBU: 67.27
Wort Boil Time (min): 60

Fermentables:
88.04% -- 11.50 lbs 2 Row
12.21% -- 0.25 lb Victory Malt
03.83% -- 0.50 lb Crystal 10L
05.74% -- 12.00 ounces De-husked Carafa II
01.53% -- 1.00 ounces Roasted Barley

Hops:
1.50 ounces Millennium at 60 min
0.50 ounces Mosaic at 05 min
3.00 ounces Mosaic at 00 min
4.00 ounces Mosaic dry hop for 8 days

Extras:
1 whirlfloc
7 g of gypsum in mash
1 tsp of lactic acid in sparge

Yeast:
WLP001 California ale yeast

Mash:
Sacch rest: 60 min at 150F

Notes:
  • 2/23/2014: Brewed 
  • Pitched yeast at 68F
  • Fermented in living room, near window (a little too warm currently)
  • 2/26/2014: added a blow-off tube, as fermentation is currently going wild.
  • 3/5/2014: Transferred to secondary and dry hopped with 4 oz of Mosaic Hops.
  • 3/11/2014: Kegged. Somewhat worried about oxidation and loss of aroma, because twice we discovered that the cap on the carboy had blown off. We finally put a airlock on to prevent this. Taste is not as hoppy as we were hoping, Hopefully hops will come through once carbonated.
