Sessi-weizen (Little Hefe)

Taking a short break from Session IPA and thinking toward summer. 

Recipe specifics:
Size (Gal): 6
Total Grain (lbs): 12.125
Projected OG: 1.047
Projected SRM: 3
Projected IBU: 12
Wort Boil Time (min): 90
Projected ABV: 4.59%

Fermentables:
49.00% -- 6.0 lbs Pilsner
41.00% -- 5.0 lbs White Wheat Malt
01.00% -- 2.0 ozs Acidulated malt
08.00% -- 1.0 lbs Rice Hulls


Hops:
1.00 ounce of Hallertauer Mittelfrüh at 60min

Extras:
3 grams - Gypsum (split between mash and sparge)
1 Whirlfloc tablet


Yeast:
White Labs WLP0300 Hefeweizen Ale Yeast

Mash:
Sacch rest: 60 min at 152F
Single Decoction

Notes:
  • 4/26/2015: Brewed
  • Pitched yeast at 62F
  • Fermented at 62 for 5 days; allowed to organically rise until kegging; kegged at 13 days
  • 5/09/2015: kegged
Tasting Notes:

  • Aroma: esters with some cloves and bread
  • Taste: balance of cloves and banana; finishes dry and clean
  • Overall: light and balanced hefe for summer drinking; low fermentation temp really payed off--thanks swamp cooler
