Red IPA

We wanted a nice red malty IPA for the the spring. Something that is balanced but not quite as light as the session IPA that we just kicked. The malt bill of this IPA is based of Lakefront Brewing's Fixed Gear Red Ale. The hops we chose were El Dorado and Simcoe. Simcoe hops are one of our favorites for hoppy beers. We have never used El Dorado hops before but we are hoping they play well together.

04.92% -- 12 ounces Crystal 60L

Hops:
2.00 ounces of Galena at 60 minutes
2.00 ounces of Simcoe at 0 minutes
2.00 ounces of El Dorado at 0 minutes
2.00 ounces of Simcoe dry hop for 6 days
2.00 ounces of El Dorado dry hop for 6 days

Extras:
6 grams - Gypsum (split between mash and sparge)
1 Whirlfloc tablet

Yeast:
WLP090 San Diego Super Yeast

Mash:
Sacch rest: 90 min at 148F




Notes:
  • 4/12/2015: Brewed 
  • Pitched yeast at 65F
  • Fermented in swamp cooler with ice pack
Tasting Notes:
  • Aroma: pineapple and floral citrus hops with some toffee
  • Tasting: bitter and citrus hops with darker malt caramel and malty; finishes caramel, bitter, and toffee
